Zesty Shrimp and Avocado Ceviche
Ingredients
- ¼ cup red onion (chopped)
- 2 limes (juice)
- 1 tsp olive oil
- ¼ tsp salt, pepper
- 1 lb cooked shrimp (chopped)
- 1 medium tomato (diced)
- 2 medium avocada (diced)
- 1 jalapeno (diced)
- 1 Tbsp cilantro (chopped)
Directions
- Combine red onion, lime juice, olive oil, and salt + pepper
- Let marinate to mellow onions while you prepare remaining
- Combine remaining ingredients, stir together
- Salt + pepper to taste
Refrigerate, prepare ahead of time. It tastes better when flavors get a chance to know each other.
