Roast Turkey
Ingredients
- 14-20lb turkey
- 1 tbsp salt
- 1 tsp pepper
- 4 cups chicken stock
- 1 medium onion
- 4 garlic cloves
- 6 sprigs thyme
- 1 stick butter
Equipment: Cheesecloth, Twine, Turkey baster
Directions
Night Before
- Place thawed turkey on roasting rack and pat dry
- Remove innards and put in bottom of roast pan
- Sprinkle 1 tbsp salt over entire bird and cavity
- Tie legs together with twine, fold neck skin under
- Cover with plastic wrap and back in fridge
Morning
- Remove 90 minutes before roasting
- Start prep 30 minutes prior, preheat 425°F
- Add stock, onion, garlic, thyme, butter to pot
- Bring to boil and simmer for 10 minutes
- Cool mixture for 10 minutes
- Remove plastic and season bird with pepper
- Cover bird with cheesecloth
- Discard solid parts and spoon over soaking entire cheesecloth
- Place turkey in over and roast for 45 minutes
- Reduce temperature to 375°F and cook remainder
- Baste and then remove cheesecloth, brown turkey 15 minutes
- Remove turkey from oven and let rest 30-60 minutes
Schedule
For 20lb bird:
- 8:30am – Out of Fridge
- 9:30am – Preheat, start prep
- 10:00am – Bird in oven
- 10:45am – Turn down oven
- 2:45pm – Remove cheesecoth
- 3:00pm – Turkey is done, let rest
- Ready to eat 3:30pm-4:00pm
