Roast Turkey

Ingredients

Equipment: Cheesecloth, Twine, Turkey baster

Directions

Night Before

  1. Place thawed turkey on roasting rack and pat dry
  2. Remove innards and put in bottom of roast pan
  3. Sprinkle 1 tbsp salt over entire bird and cavity
  4. Tie legs together with twine, fold neck skin under
  5. Cover with plastic wrap and back in fridge

Morning

  1. Remove 90 minutes before roasting
  2. Start prep 30 minutes prior, preheat 425°F
  3. Add stock, onion, garlic, thyme, butter to pot
  4. Bring to boil and simmer for 10 minutes
  5. Cool mixture for 10 minutes
  6. Remove plastic and season bird with pepper
  7. Cover bird with cheesecloth
  8. Discard solid parts and spoon over soaking entire cheesecloth
  9. Place turkey in over and roast for 45 minutes
  10. Reduce temperature to 375°F and cook remainder
  11. Baste and then remove cheesecloth, brown turkey 15 minutes
  12. Remove turkey from oven and let rest 30-60 minutes
