Chicken Cacciatore
Ingredients
- 2 Tbsp olive oil
- 8 chicken drumsticks, ~2lbs
- ¼ cup tomato paste
- ¼ cup balsamic vinegar
- 1 tsp dried sage (thyme)
- ¼ tsp red chile flakes
- 1 lbs small button mushrooms
- 1 Tbsp garlic (chopped)
Directions
- In large skillet, add oil over medium heat. Add chicken and sprinkle with salt and pepper. Adjust heat so sizzles w/o burning and cook undisturbed 5-8min until browned and releases easily.
- Sauce: In medium bowl, add tomato paste and vinegar. Add 1.5 cup water, sage, red chile flakes, salt + pepper. Whisk until smooth.
- Scatter mushrooms and garlic in skillet. Pour sauce over chicken and shake pan to combine Bring to boil and reduce heat . Cook uncovered for about 20 min, occasionally shaking the pan.
