Zesty Lemon Cake
Ingredients
- 8 Tbsp butter (softened)
- ¼ cup vegetable oil
- 2/3 cup sugar
- 3 eggs
- 2 Tbsp buttermilk
- ½ tsp lemon extract
- 1 lemon zest
- 1 cup flour
- ¼ cup corn starch
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
Frosting
- 5 Tbsp butter (softened)
- 2 cup powder sugar
- Lemon zest
- 1 Tbsp Lemon juice (tsp extract)
Directions
- Preheat oven 350°F

Grease cake pans, line with parchment

Beat butter, oil, and sugar (~3 min)
- Add one egg at a time
- Add buttermilk and zest
- Add dry ingredients sifted

Blend until smooth

Split between two cake pans

Bake 25 min
-
Let cool 1-2 hours
- Brush with simple syrup w/ lemon extract
